First of all, if you are running into bugs (like all your photos have the same date) please reach out to support. If you’re on mobile, you can shake your device, if you’re on the web, you can use the settings cog.
As for the ability to change metadata on photos, that’s not something we currently have on the immediate roadmap.

I would think it would be an easy addition but maybe I'm wrong. It just feels like more effort is put into advertising and data mining than product development. Please Microsoft, I have loved your earlier products and have really tried to stay with them but I have given up on Windows phone, Outlook, Internet Explorer, Microsoft app store, music, Edge, Onenote, and now Onedrive. Please get back to good product development.
