I did a lot of tests: OneDrive on a separate drive works perfectly, even if APFS formatted. You can remove the drive and connect it again, OneDrive manages always the situation in the right way.
The only (small) detail is that when you reconnect the drive, the sync does not start automatically: a simple workaround is to pause synchronization and start it again.

I also don't understand... it is possible to set the OneDrive folder where you want (from Users tab).
The problem is that any time I restart my Mac it starts again syncing, some times for hours...
I asked Microsoft support but they simply do not know anything...
